In case your wondering if I've gone cookies around here,
I made all the sweet treats for the Vera's Daughter Christmas Open House on Sunday.
Since I blog about things I make, well, cookies are what I made last Saturday.
If you thought the Oreo Truffles were a little too much work, Forgotten Cookies are just for you.
You make the batter, put them on a pan, and forget about them.
Get your stuff:
2 egg whites
3/4 cup sugar
1 cup mini-chocolate chips
1 cup chopped pecans (chopped somewhat finely)
1 tsp vanilla
pinch of salt
Preheat Oven to 350.
Cover large cookie sheet with foil.
Beat the egg whites until they have quite a bit of body. Add the sugar and beat until stiff. This means stiff. When you make a peak it stands up straight and doesn't lean over.
Fold in vanilla, salt, chocolate chips and pecans.
Drop by the teaspoonful onto the cookie sheet.
Put into the oven.
Close the oven door.
TURN OFF THE OVEN and leave the cookies in overnight.
Just yummy. In fact when I left the open house I had several orders for people to take to their Christmas occasions.
Ummmmmmmmmmm. Crispy. Chewy. Melt-in-your mouth, cookies.
