To spare you I'll just focus on Memorial Day.
I took advantage of the holiday to use some of my Pinterest recipes . . .
First there was this -
|Roasted Tomato Caprese Panzanella|
Mine didn't look like this.
I got carried away with the balsamic drizzle . . .
and I over-cooked the bread croutons. Not on purpose, but I sat the pan down on the stove top after I took it out of the oven and didn't remember that the burner was still on.
It was a little crunchier than it should have been.
The other Pinterest recipe I used was for dessert...
this one -
|Krispie Ice Cream Dessert|
This was a winner.
Loved by all.
And VERY easy. Nothing like my cakes!
We used Sanders Extra Dark Hot Fudge Topping , but I would love to try this with caramel or butterscotch topping.
I still have some in my freezer and it's all I can do to not just eat it all at once.
I may have had two servings yesterday...
Before dessert there were ribs and spicy pork chop sliders.
And there was this -
I haven't eaten meatloaf in 30 years.
Mr. Quirky made it.
It starts out like this
I know. That's a lot of bacon.
But isn't it pretty?
This is a celebration meatloaf after all.
After it cooks it looks like this -
Oh my soul!
This meatloaf is magnificent.
The recipe is adapted from this recipe from SmokingPit.com - with these adaptations: substitute 2 pounds sausage for 2 pounds of the ground beef and substitute barbeque sauce for the ketchup.
You can learn about the weaving and wrapping with bacon at Grillin Fools.com. This woven bacon wrap is impressive if not delicious.
That's all I needed.
