It's really great.
I got the recipe from a friend like 20 years ago.
Did I mention it's really great soup?
I've made it 4 or 5 times a year ever since.
I make it every time I want a really great soup.
I make it for large groups.
I make it for friends.
Occasionally, I make it just for us.
My sister won a soup making cook-off with it.
It's THAT great.
So what else to you call really great soup?
Wanna make it?
Get your stuff.
½ stick butter or margarine
3 green onions chopped or ½ regular onion
3 stalks celery
2 carrots grated
1 box broccoli flowerets - I always get a big bag and add a whole bunch
Tobasco (I have never used this)
8 oz sour cream
3 cans cream-of-potato soup
8 oz grated cheddar cheese
4 chicken breasts cut into bite sized pieces - salt lightly
2 10oz cans of chicken broth – can use less or more, depending on desired thickness - but this is a good starting point
Brown chicken bits (lightly stir fry, don’t overcook) set aside
Melt butter in soup pot & saute onion, celery, and carrots- add frozen broccoli midway - maybe 10 minutes total
Add broth & simmer 20 minutes
Add soup and cook till warm
Add cheese, parsley, tobasco, then sour cream – simmer 15 minutes.
This can be made with reduced fat ingredients – never use fat free – also you could use less butter or use olive oil.
Canned chicken broth, potato soup, and cheese are typically salty so I usually don't add more salt.
I imagine that you could make all the broth and potato soup from scratch as well. I'm not adverse to that. I just haven't done it. And it would make this very easy, relatively quick dinner, quite a production. But certainly, do as you please.
