Lemon Bread

Happy day everyone!

I'm becoming a lemon lover in my old age. So when I saw this recipe for Glazed Light Lemon Bread on Mom on Time Out, I couldn't wait to make it.

I served it for dessert last Saturday night. But the next time I make it will be for breakfast or brunch. 

It really is a bread - not a cake.

It is perfect with berries and vanilla ice cream yogurt. 

And it's a bit healthy - made with buttermilk and only 1/4 cup of oil.

The glaze is perfect.

Or, you could make it this afternoon for a snack.

So start cooking.

Get your stuff:

For the bread -

1 3/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup buttermilk
1/4 cup coconut oil
1 egg
2 Tbsp lemon juice
3 Tbsp lemon zest 

3/4 cup sugar
For the glaze - 

1/2 cup powdered sugar
2 Tbsp lemon juice
1 Tbsp lemon zest to sprinkle on top (optional) 

Heat oven to 350 degrees
Grease a 8x4 loaf pan
Whisk together the flour, baking powder, and salt
Beat together buttermilk, coconut oil, egg, lemon juice, and zest
Stir in sugar
Stir in dry ingredients
Pour in loaf pan and bake for 45-55 minutes or until tester comes out clean.
Cool in pan for 10 minutes, then place on wire rack
Whisk together sugar and lemon juice
Place a sheet of wax paper or parchment paper under the cake on the rack
Pour over bread
Sprinkle remaining zest over bread

Get some coffee.

Get some berries.

Um Yum.

Yum! I like lemon more now than I did, too...found a great gin with lemon drink! If DL likes the look of this, I'll make it for him. (But he usually wants chocolate.) Maybe if I add berries to the recipe??? Then it will count as fruit.
